Project Profile: The bio-enzymatic production of gelatin cuts off the macro-molecule in a short time by the enzyme’s specificity to the substrate. To enable the enzyme to cut off the macro-molecules, there must be a set of process parameters corresponding to it, such as the temperature, PH, stirring rate, reacting time and dosage of biological reagent. A large number of parameters are used to control the speed of collagen decomposition and effectively retain gelatin of high proportion of weight-average component content, thus separating the calcium salt ultrafine particle from the gelatin to make the yield, concentration, viscosity, transparency and gel strength meet the different requirements of the user and make the quality of calcium salt products meet the standard requirements. Featuring a short production cycle, small water consumption, and high homogeneity of the product, it addresses the haunting issues of long production period and high-energy consumption for the gelatin production. And it greatly improves the production efficiency and lowering the production cost, it makes real contribution to the transformation and upgrade of the gelatin production.
